Ingredients
Scale
Chicken & Stuffing
- 4 boneless, skinless chicken breasts
- 1 small apple, thinly sliced (recommended: Honeycrisp or Granny Smith)
- 4 ounces brie cheese, sliced
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- 1/2 teaspoon dried thyme
Maple Mustard Glaze
- 3 tablespoons maple syrup
- 2 tablespoons Dijon mustard
- 1 tablespoon whole grain mustard
- 1 teaspoon apple cider vinegar
- Pinch of salt
Instructions
- Prepare the Oven and Baking Dish: Preheat the oven to 375°F (190°C). Grease a baking dish or line it with parchment paper to prevent sticking.
- Create Chicken Pockets: Carefully slice each chicken breast horizontally to create a pocket without cutting all the way through. Season both inside and outside of each breast with salt, black pepper, and dried thyme to enhance flavor.
- Stuff Chicken: Fill each chicken pocket with several slices of brie cheese and apple. Secure the opening with toothpicks if necessary to keep stuffing inside while cooking.
- Make the Glaze: In a small bowl, whisk together the maple syrup, Dijon mustard, whole grain mustard, apple cider vinegar, and a pinch of salt until smooth and well combined.
- Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2 to 3 minutes per side or until golden brown, which locks in juices and adds flavor.
- Apply Glaze and Bake: Brush the tops of the seared chicken breasts generously with the maple mustard glaze. Transfer the skillet to the preheated oven (or move chicken to the prepared baking dish).
- Bake to Perfection: Bake for 18 to 22 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the brie has melted inside.
- Final Glaze and Serve: Brush the chicken once more with the glaze before serving to enhance the glossy finish and flavor. Remove toothpicks, plate, and enjoy.
Notes
- Choose a firm apple variety like Honeycrisp or Granny Smith for a delightful contrast in texture and a perfect balance of sweet and tart.
- This dish pairs beautifully with roasted vegetables or wild rice for a complete meal.
- Ensure chicken is cooked to an internal temperature of 165°F (74°C) for safety and optimal juiciness.
- Use an oven-safe skillet to sear and bake in the same vessel for easier cleanup and better flavor incorporation.
