Description

A deliciously elegant main course featuring tender chicken breasts stuffed with creamy brie and crisp apple slices, glazed with a sweet and tangy maple mustard sauce. Perfect for a cozy fall dinner or special occasion.

Ingredients

Scale

Chicken & Stuffing

  • 4 boneless, skinless chicken breasts
  • 1 small apple, thinly sliced (recommended: Honeycrisp or Granny Smith)
  • 4 ounces brie cheese, sliced
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1/2 teaspoon dried thyme

Maple Mustard Glaze

  • 3 tablespoons maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 teaspoon apple cider vinegar
  • Pinch of salt

Instructions

  1. Prepare the Oven and Baking Dish: Preheat the oven to 375°F (190°C). Grease a baking dish or line it with parchment paper to prevent sticking.
  2. Create Chicken Pockets: Carefully slice each chicken breast horizontally to create a pocket without cutting all the way through. Season both inside and outside of each breast with salt, black pepper, and dried thyme to enhance flavor.
  3. Stuff Chicken: Fill each chicken pocket with several slices of brie cheese and apple. Secure the opening with toothpicks if necessary to keep stuffing inside while cooking.
  4. Make the Glaze: In a small bowl, whisk together the maple syrup, Dijon mustard, whole grain mustard, apple cider vinegar, and a pinch of salt until smooth and well combined.
  5. Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2 to 3 minutes per side or until golden brown, which locks in juices and adds flavor.
  6. Apply Glaze and Bake: Brush the tops of the seared chicken breasts generously with the maple mustard glaze. Transfer the skillet to the preheated oven (or move chicken to the prepared baking dish).
  7. Bake to Perfection: Bake for 18 to 22 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the brie has melted inside.
  8. Final Glaze and Serve: Brush the chicken once more with the glaze before serving to enhance the glossy finish and flavor. Remove toothpicks, plate, and enjoy.

Notes

  • Choose a firm apple variety like Honeycrisp or Granny Smith for a delightful contrast in texture and a perfect balance of sweet and tart.
  • This dish pairs beautifully with roasted vegetables or wild rice for a complete meal.
  • Ensure chicken is cooked to an internal temperature of 165°F (74°C) for safety and optimal juiciness.
  • Use an oven-safe skillet to sear and bake in the same vessel for easier cleanup and better flavor incorporation.
