- 1 cup refried beans
Toppings
- 1 cup shredded cheddar or Mexican blend cheese
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped red onion
- 1/4 cup sliced black olives (optional)
- 1/4 cup sour cream
- 1/4 cup salsa
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the tortillas.
- Prepare Tortillas: Lightly brush both sides of each corn tortilla with olive oil to ensure crispiness and golden color during baking.
- Bake Tortillas: Arrange the tortillas in a single layer on a baking sheet and bake for 4 to 5 minutes per side until crispy and golden brown. Remove from oven and let cool slightly.
- Heat Beans: While tortillas bake, warm the refried beans in a saucepan over medium heat or microwave until hot and spreadable.
- Assemble Tostadas: Spread a layer of the warm refried beans evenly over each crispy tortilla. Sprinkle shredded cheese on top of the beans.
- Melt Cheese: Return the assembled tortillas to the oven for an additional 2 to 3 minutes, just until the cheese melts.
- Add Fresh Toppings: Remove from oven and top each tostada with shredded lettuce, diced tomatoes, chopped red onion, olives if using, sour cream, and salsa. Season with salt and pepper to taste.
- Serve: Serve immediately while warm and enjoy your quick oven-baked tostadas.
Notes
- To make the tostadas more filling, add cooked ground beef, shredded chicken, or seasoned tofu.
