Ingredients

Scale

Tortillas and Base

  • 6 corn tortillas
  • 1 tablespoon olive oil
  • 1 cup refried beans

Toppings

  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the tortillas.
  2. Prepare Tortillas: Lightly brush both sides of each corn tortilla with olive oil to ensure crispiness and golden color during baking.
  3. Bake Tortillas: Arrange the tortillas in a single layer on a baking sheet and bake for 4 to 5 minutes per side until crispy and golden brown. Remove from oven and let cool slightly.
  4. Heat Beans: While tortillas bake, warm the refried beans in a saucepan over medium heat or microwave until hot and spreadable.
  5. Assemble Tostadas: Spread a layer of the warm refried beans evenly over each crispy tortilla. Sprinkle shredded cheese on top of the beans.
  6. Melt Cheese: Return the assembled tortillas to the oven for an additional 2 to 3 minutes, just until the cheese melts.
  7. Add Fresh Toppings: Remove from oven and top each tostada with shredded lettuce, diced tomatoes, chopped red onion, olives if using, sour cream, and salsa. Season with salt and pepper to taste.
  8. Serve: Serve immediately while warm and enjoy your quick oven-baked tostadas.

Notes

  • To make the tostadas more filling, add cooked ground beef, shredded chicken, or seasoned tofu.
  • For a vegan option, substitute dairy-free cheese and sour cream.
  • Customize toppings to your preference for added flavors and textures.
