Description

This Mushroom Sandwich Melts recipe features a delicious blend of sautéed mushrooms and caramelized onions layered with melted Swiss or provolone cheese on rustic sourdough bread, grilled to golden perfection. Perfect for a hearty vegetarian main course, it combines savory mushrooms with creamy cheese for a comforting and flavorful sandwich.

Ingredients

Scale

Mushroom Mixture

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 small yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 8 ounces cremini or white mushrooms, sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 cup white wine or vegetable broth

Sandwich

  • 4 slices sourdough or rustic bread
  • 1 tablespoon Dijon mustard
  • 1 cup shredded Swiss or provolone cheese
  • Butter for grilling

Instructions

  1. Sauté Onions: Heat olive oil and butter in a large skillet over medium heat. Add sliced onions and sauté for 5–7 minutes until softened and lightly caramelized, developing a sweet, rich flavor.
  2. Add Garlic and Mushrooms: Add the minced garlic and sliced mushrooms to the skillet. Cook for another 8–10 minutes, stirring occasionally until the mushrooms release their moisture and turn golden brown.
  3. Season and Deglaze: Season the mixture with salt, pepper, and dried thyme. Pour in the white wine or vegetable broth to deglaze the pan, scraping up any browned bits. Cook for 2–3 minutes until the liquid has evaporated, then remove from heat.
  4. Assemble Sandwiches: Spread Dijon mustard evenly on two slices of bread. Layer the mushroom and onion mixture over the mustard, then sprinkle the shredded Swiss or provolone cheese generously on top. Cover with the remaining bread slices to form two sandwiches.
  5. Grill the Sandwiches: Butter the outsides of the assembled sandwiches. Grill them in a skillet or panini press over medium heat for 3–4 minutes per side, pressing gently, until the bread is golden brown and the cheese is fully melted.
  6. Serve: Remove the sandwiches from the heat, slice in half, and serve hot for a delicious and satisfying meal.

Notes

  • Add a handful of fresh spinach or arugula inside the sandwich for extra greens and nutritional boost.
  • Use vegan butter and vegan cheese to create a dairy-free version of this dish.
  • White wine can be substituted with vegetable broth for a non-alcoholic option.
  • Try different bread types like whole grain or rye for varied textures and flavors.
