Instructions

  1. Soften Dates: Soak the pitted Medjool dates in warm water for 10 minutes if they are firm to soften them, then drain thoroughly to remove excess water.
  2. Chop Nuts: Place the raw almonds in a food processor and pulse until they are finely chopped but not turned into flour, ensuring some texture remains.
  3. Add Dates: Add the softened dates to the chopped almonds in the food processor and blend until the mixture is well combined and sticky.
  4. Mix Dry: In a separate bowl, combine the unsweetened cocoa powder, chia seeds, shredded coconut, and a pinch of sea salt, stirring them together evenly.
  5. Mix Wet: In another bowl, stir together the almond butter, maple syrup (or honey), and vanilla extract until the mixture is smooth and uniform.
  6. Combine All: Add the dry ingredient mix to the date and nut mixture in the food processor, followed by the wet ingredient mixture. Blend everything until fully incorporated and a sticky, cohesive batter forms.
  7. Press: Line an 8×8-inch dish with parchment paper and firmly press the brownie mixture evenly into the dish to form an even, compact layer.
