Instructions

  1. Cook the Chicken: Heat olive oil in a large, deep skillet or pot over medium-high heat. Add the chicken pieces along with Italian seasoning, garlic powder, salt, and pepper. Cook for 4–5 minutes, stirring occasionally, until the chicken is browned on all sides but not fully cooked through.
  2. Sauté Onion and Garlic: Add the diced onion and minced garlic to the pot. Sauté for another 2–3 minutes until the onion is softened and fragrant.
  3. Add Liquids and Pasta: Pour in the chicken broth and marinara sauce, stirring well to combine everything evenly. Add the uncooked penne or rotini pasta and bring the mixture to a boil.
  4. Simmer: Reduce the heat to medium-low. Cover the pot and simmer for 12–15 minutes, stirring occasionally. Cook until the pasta is tender and the chicken is fully cooked through.
  5. Mix in Parmesan: Stir in the grated Parmesan cheese until it melts and blends into the sauce, adding a rich flavor and creamy texture.
  6. Add Mozzarella and Melt: Sprinkle shredded mozzarella cheese on top of the pasta. Cover the pot again and let it sit off the heat for 2–3 minutes, allowing the cheese to melt completely.
  7. Garnish and Serve: Sprinkle chopped fresh basil or parsley over the pasta for a pop of color and fresh flavor before serving.

Notes

  • Use rotisserie chicken instead of raw chicken to save time; just reduce the simmering time slightly since the chicken is already cooked.
