Instructions
- Prepare the Oven and Molds: Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin or financier molds to ensure the cakes release easily after baking.
- Brown the Butter: Melt the unsalted butter in a small saucepan over medium heat. Continue cooking for about 5–6 minutes until it turns golden brown and develops a nutty aroma. Remove from heat and allow to cool slightly.
- Mix Dry Ingredients: In a large bowl, whisk together almond flour, all-purpose flour, powdered sugar, and salt until evenly combined.
- Add Egg Whites and Vanilla: Incorporate the egg whites and vanilla extract into the dry mixture, stirring until you achieve a smooth batter without lumps.
- Incorporate Browned Butter: Slowly pour the browned butter into the batter, mixing thoroughly to combine all ingredients into a silky batter.
- Fill the Molds: Evenly divide the batter among the prepared molds, filling each about three-quarters full for room to rise.
- Add Peach and Toppings: Gently press a few pieces of diced peach into the center of each cake and sprinkle sliced almonds on top if desired for a crunchy finish.
- Bake: Place the mold in the oven and bake for 15–18 minutes, or until the edges turn golden brown and a toothpick inserted into the center comes out clean.
- Cool and Serve: Let the financiers cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely before serving to retain their delicate texture.
