Description

Pecan Pie Balls are a delightful bite-sized treat combining the rich, toasty flavor of pecans with the sweetness of dates and brown sugar. These no-bake balls are coated with crunchy chopped pecans for an irresistible texture and are perfect as a festive snack or dessert.

Ingredients

Scale

Main Ingredients

  • 1 ½ cups pecan halves
  • 1 cup graham cracker crumbs
  • 1 cup finely chopped dates
  • ½ cup light corn syrup
  • ½ cup brown sugar, packed
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 1 cup finely chopped pecans (for coating)

Instructions

  1. Toast the Pecan Halves: Preheat your oven to 350°F (175°C). Spread the pecan halves evenly on a baking sheet and toast them for 8 to 10 minutes until fragrant. Allow the pecans to cool completely before using.
  2. Prepare the Mixture: Pulse the cooled toasted pecan halves in a food processor until they are finely chopped. Transfer these chopped pecans to a large mixing bowl and combine with graham cracker crumbs and finely chopped dates, mixing well.
  3. Combine Wet Ingredients: In a small saucepan over medium heat, warm the light corn syrup and brown sugar, stirring until the sugar dissolves completely and the mixture is smooth. Remove the pan from heat and mix in the vanilla extract and salt.
  4. Mix Everything Together: Pour the warm syrup mixture over the pecan and graham cracker mixture. Stir thoroughly until all ingredients are well combined and form a sticky mixture.
  5. Shape into Balls: Using your hands or a small scoop, shape the mixture into 1-inch balls. Place each ball on a parchment-lined baking sheet, spacing them out slightly.
  6. Coat with Pecans: Roll each shaped ball in the finely chopped pecans, ensuring they are fully coated for added crunch and flavor.
  7. Chill and Set: Place the coated balls in the refrigerator and chill for at least 1 hour to allow them to firm up before serving.

Notes

  • For a nut-free version, substitute pecans with roasted sunflower seeds and use a nut-free coating alternative.
  • Ensure pecans are fully cooled after toasting to prevent melting the syrup mixture.
  • Store the pecan pie balls in an airtight container in the refrigerator for up to one week.
  • Serve chilled for best texture and flavor.
  • If dates are not available, finely chopped dried apricots can be used as a substitute.
