Description

This Pickle Brined Chicken Thighs recipe features tender, juicy chicken thighs soaked in flavorful pickle juice, then seasoned and grilled to perfection. The pickle brine adds a tangy, savory twist that enhances the chicken’s natural flavors, while the lemon pepper dill seasoning provides a fresh, zesty finish. Perfect for a quick and easy grilled meal that delivers maximum taste with minimal effort.

Ingredients

Scale

Chicken and Brine

  • 1 1/2 lbs boneless skinless chicken thighs, excess fat trimmed
  • 1 24 oz jar Claussen Dill Pickles, pickle juice only

Seasoning & Oil

  • 1 tbsp olive oil
  • 1/2 tsp Oh My Spice! Lemon Pepper Dill Seasoning
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Brine the Chicken: Place chicken thighs in an airtight container or resealable bag. Pour the pickle juice over the chicken, ensuring all pieces are submerged and coated. Refrigerate to brine for at least 1 hour, preferably about 2 hours, to tenderize and infuse flavor.
  2. Preheat the Grill: About 15 minutes before cooking, preheat your grill to 450°F (232°C) to ensure it is hot enough for a proper sear and even cooking.
  3. Prepare the Chicken: Remove chicken from the brine and place on a paper towel-lined baking sheet. Pat dry thoroughly with paper towels to remove excess moisture. Drizzle olive oil over the chicken and rub to coat all sides evenly. Season with lemon pepper dill seasoning, sea salt, and black pepper.
  4. Grill the Chicken: Place the chicken thighs smooth side down on the preheated grill. Grill for 7 minutes without moving to develop a nice sear. Flip the chicken and grill for another 4-6 minutes, or until an instant-read thermometer inserted into the thickest part reads 165°F (74°C).

Notes

  • Patting the chicken dry before grilling is essential for achieving a good sear and crispy exterior.
  • Use a meat thermometer to ensure the chicken is safely cooked through without overcooking.
  • The pickle brine adds flavor and helps keep the chicken juicy, but avoid brining longer than 4 hours to prevent overly salty meat.
  • This recipe works well with bone-in thighs but adjust grilling time accordingly.
  • The lemon pepper dill seasoning can be substituted with any similar herb and citrus blend.
