- 1 ounce coconut rum
- 2 ounces pineapple juice
- 1 tablespoon lite coconut milk
- 2 ounces club soda
Instructions
- Muddle Lime and Mint: Add the lime quarters and fresh mint leaves to the cup of a cocktail shaker. Use a muddler or the back of a spoon to gently press and crush the mint and lime together to release their aromatic oils and citrus juices.
- Add Liquids: Pour in the coconut rum, pineapple juice, and lite coconut milk into the shaker with the muddled ingredients.
- Shake with Ice: Add a handful of ice cubes to the shaker. Secure the lid tightly and shake vigorously for about 10-15 seconds until the mixture is well chilled and combined.
- Strain and Top: Strain the cocktail into a serving glass filled with fresh ice. Top it off with 2 ounces of club soda to add a bubbly finish.
- Garnish and Serve: Garnish with a lime wedge, a pineapple slice, and a sprig of fresh mint for a visually appealing and fragrant presentation. Serve immediately.
