Liquids

  • 1 ounce coconut rum
  • 2 ounces pineapple juice
  • 1 tablespoon lite coconut milk
  • 2 ounces club soda


Instructions

  1. Muddle Lime and Mint: Add the lime quarters and fresh mint leaves to the cup of a cocktail shaker. Use a muddler or the back of a spoon to gently press and crush the mint and lime together to release their aromatic oils and citrus juices.
  2. Add Liquids: Pour in the coconut rum, pineapple juice, and lite coconut milk into the shaker with the muddled ingredients.
  3. Shake with Ice: Add a handful of ice cubes to the shaker. Secure the lid tightly and shake vigorously for about 10-15 seconds until the mixture is well chilled and combined.
