Description

Pineapple Cowboy Candy is a vibrant sweet-and-spicy condiment made with fresh jalapeños and pineapple simmered in a tangy syrup. This Southern American inspired topping adds a burst of flavor to burgers, tacos, and crackers with cream cheese. It’s easy to prepare on the stovetop and brings a delightful balance of heat, sweetness, and aromatic spices.

Ingredients

Scale

Produce

  • 2 cups sliced jalapeños (fresh, stems removed)
  • 1 cup diced pineapple (fresh or canned, drained)

Other Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 cup apple cider vinegar
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • Pinch of salt

Instructions

  1. Prepare the syrup: In a medium saucepan, combine the granulated sugar, apple cider vinegar, turmeric, garlic powder, ground ginger, and a pinch of salt. Place the pan over medium heat and bring the mixture to a gentle boil, stirring continuously until all the sugar has dissolved.
  2. Add jalapeños and pineapple: Once the syrup is ready, add the sliced jalapeños and diced pineapple to the saucepan. Reduce heat slightly and let the mixture simmer for 5–7 minutes, or until the jalapeños soften slightly and the syrup thickens to a slightly syrupy consistency.
  3. Jar the candy: Using a slotted spoon, carefully transfer the jalapeños and pineapple into sterilized glass jars, leaving about 1/2 inch of headspace at the top.
  4. Pour the syrup: Pour the hot syrup over the fruit and peppers in the jars, ensuring they are completely covered by the syrup to preserve flavor and texture.
  5. Cool and store: Allow the jars to cool to room temperature before sealing them with lids. Refrigerate the jars for at least 24 hours to allow the flavors to fully meld and develop.

Notes

  • Serve this candy with cream cheese and crackers as a flavorful appetizer.
  • Use as a topping for burgers, tacos, sandwiches, or grilled meats for an added sweet and spicy kick.
  • Store in the refrigerator for 2–3 weeks for best freshness and taste.
