Ingredients
Scale
Main Ingredients
- 1 fresh pineapple (peeled, cored, and cut into 1.5-inch chunks)
- 2 tablespoons honey
- 1 tablespoon lime juice
- 1/2 teaspoon ground cinnamon
- 1 tablespoon melted coconut oil or vegetable oil
- Wooden or metal skewers
- Optional: fresh mint leaves for garnish
Instructions
- Soak Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
- Make Marinade: In a small bowl, whisk together the honey, lime juice, ground cinnamon, and melted coconut oil to create a flavorful glaze.
- Prepare Pineapple Skewers: Thread the pineapple chunks onto the skewers, packing them snugly but leaving a little space to ensure even cooking.
- Apply Glaze: Generously brush the honey-lime-cinnamon mixture over all sides of the pineapple chunks on the skewers.
- Preheat Grill: Preheat a grill or grill pan over medium-high heat to ensure it’s hot enough to caramelize the pineapple.
- Grill Pineapple: Place the skewers on the grill and cook for about 6–8 minutes, turning occasionally until the pineapple is lightly charred and caramelized.
- Garnish and Serve: Remove from heat and garnish with fresh mint leaves if desired. Serve warm or at room temperature.
Notes
- For a savory twist, add a sprinkle of chili powder or a dash of cayenne pepper before grilling.
- These skewers pair well with grilled chicken or can be served as a light dessert with a scoop of coconut ice cream.
- Soaking wooden skewers is important to prevent them from burning on the grill.
