Ingredients
Scale
Vegetables and Herbs
- 1 pound asparagus, ends trimmed, cut into 2-inch pieces
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
Other Ingredients
- 1 tablespoon olive oil
- 1/4 cup chicken broth (or vegetable broth for vegetarian)
- 1 tablespoon lemon juice
- 1/4 cup grated Parmesan cheese, plus more for serving
- 1 package (20 ounces) refrigerated cheese ravioli
- Salt and pepper to taste
Instructions
- Cook Ravioli: Cook the refrigerated cheese ravioli according to the package instructions. Drain well and set aside to keep warm.
- Sauté Asparagus: In a large skillet, heat olive oil over medium-high heat. Add the asparagus pieces and cook for 4-5 minutes, stirring occasionally, until they are tender-crisp and slightly browned.
- Add Tomatoes and Garlic: Add the halved cherry tomatoes and minced garlic to the skillet. Season with salt and pepper to taste. Cook for 2-3 minutes, stirring gently, until the tomatoes begin to soften and release their juices.
- Simmer with Broth and Lemon: Pour in the chicken broth and lemon juice. Reduce heat slightly and simmer for 2 minutes to allow the flavors to meld.
- Toss in Ravioli: Add the cooked ravioli to the skillet. Toss gently to coat the ravioli evenly with the vegetable mixture and sauce.
- Finish with Herbs and Cheese: Stir in the chopped fresh basil, parsley, and grated Parmesan cheese. Cook for an additional 1-2 minutes to warm through and combine flavors.
- Serve: Serve the ravioli hot, garnished with additional Parmesan cheese if desired for extra flavor and presentation.
Notes
- For a vegetarian version, use vegetable broth instead of chicken broth.
- To add protein, consider tossing in cooked grilled chicken or shrimp.
- Fresh herbs like basil and parsley can be substituted with dried herbs if fresh are unavailable, but use less dried.
- Make sure not to overcook the asparagus to retain its crisp texture.
- Use freshly grated Parmesan for the best flavor and melting quality.
