Ingredients
Scale
Fruit
- 1 pound fresh strawberries (about 20 large berries)
- 20 fresh blueberries
Cheesecake Filling
- 4 oz cream cheese, softened
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
Optional Garnish
- Graham cracker crumbs
- White chocolate drizzle (melted white chocolate)
Instructions
- Prepare Strawberries: Rinse the strawberries and pat them completely dry. Remove the green tops and carefully hollow out the center of each strawberry using a paring knife or small melon baller to create space for the filling.
- Make Cheesecake Filling: In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until the mixture is smooth, creamy, and fluffy.
- Fill Strawberries: Spoon or pipe the cream cheese mixture into the hollowed centers of each strawberry, filling them generously but without overflow.
- Add Blueberry Topping: Place one fresh blueberry on top of the cheesecake filling in each strawberry to complete the red, white, and blue look.
- Optional Garnish: For extra flavor and decoration, optionally sprinkle the filled strawberries with graham cracker crumbs or drizzle with melted white chocolate.
- Chill: Place the completed strawberries in the refrigerator and chill for at least 30 minutes before serving to allow the filling to firm up and the flavors to meld.
Notes
- Make sure strawberries are completely dry before hollowing and filling to avoid watery filling.
- Use full-fat cream cheese for best texture and flavor.
- You can prepare these a few hours in advance and keep chilled until serving.
- For a white chocolate drizzle, melt white chocolate gently over a double boiler or microwave in short bursts.
- If desired, substitute powdered sugar with a sugar alternative for a lower sugar version.
