- 1–2 teaspoons honey

Instructions
- Preheat the oven: Set your oven to 375°F (190°C) to prepare for roasting the strawberries.
- Roast the strawberries: On a parchment-lined baking sheet, toss the hulled and halved strawberries with honey, balsamic vinegar, olive oil, and a pinch of salt. Spread them out evenly and roast for 20–25 minutes, until they are soft and caramelized.
- Prepare whipped ricotta: While the strawberries roast, place the ricotta cheese, lemon zest, and honey in a food processor or mixing bowl. Blend or whip until the mixture becomes smooth and creamy, approximately 1–2 minutes.
- Toast the bread: Toast the sourdough or rustic bread slices until they are golden brown and crisp to provide a sturdy base for the toppings.
- Assemble the toast: Spread a generous layer of the whipped ricotta over each toasted bread slice. Spoon the warm roasted strawberries over the ricotta layer.
- Garnish and serve: Add fresh mint leaves on top of each toast. Optionally, drizzle with honey or balsamic glaze for extra sweetness and tang. Serve immediately for the best flavor and texture.
