Description

Rotel Dip is a creamy, spicy cheese dip made with ground beef, taco seasoning, diced tomatoes with chilies, and melted Velveeta cheese. Perfect for parties and gatherings, it’s quick and easy to prepare, delivering a flavorful and comforting appetizer to enjoy with tortilla chips or bread.

  • 1 lb ground beef (lean, medium, or extra lean)
  • 1 tbsp taco seasoning (or 1/2 tsp each chili powder, garlic powder, onion powder, paprika, cumin)

Cheese and Vegetables

  • 1 can Rotel (10 ounces, or 1 can diced tomatoes with chilies)
  • 1 brick Velveeta cheese (2 cups, 16 ounces, cubed)

Garnishes (Optional)

  • Diced tomatoes (reserved from Rotel, about 1 tbsp)
  • Freshly chopped parsley or cilantro
  • Chopped green onions


Instructions

  1. Cook the Ground Beef: Heat a large skillet or frying pan over medium heat. Add 1 lb ground beef and break it apart with a wooden spoon. Cook until there is no pink left and the meat is thoroughly cooked, about 5 minutes. Drain any excess fat to keep the dip from being greasy.
  2. Add Seasoning and Rotel: Reduce heat to medium and stir in 1 tbsp taco seasoning and the entire can of Rotel with juices. Cook for 2-3 minutes, allowing the flavors to combine and the mixture to begin simmering. Optionally, reserve 1 tbsp of the diced tomatoes for garnishing later.
  3. Incorporate Velveeta Cheese: Add the cubed Velveeta cheese to the skillet. Stir continuously over medium heat until the cheese melts completely and the dip becomes smooth and creamy.
  4. Garnish and Serve: Optionally garnish the dip with the reserved diced tomatoes, freshly chopped parsley or cilantro, and sliced green onions. Serve the dip immediately with tortilla chips, crostini, or toasted baguette slices for dipping.

Notes

  • Use lean ground beef to reduce excess grease in the dip.
  • If Velveeta is not available, processed cheese alternatives can be used but may affect texture and flavor.
  • Adjust the level of spiciness by selecting mild or hot Rotel.
