Description

Skillet Greek Chicken is a flavorful and easy-to-make one-pan meal featuring succulent boneless chicken thighs seasoned with classic Mediterranean herbs and spices. Cooked on the stovetop and finished with tangy feta cheese, kalamata olives, fresh cherry tomatoes, and red onion, this dish offers a perfect balance of savory and fresh flavors. Ideal for a quick weeknight dinner, it pairs wonderfully with rice, orzo, or roasted vegetables.

Ingredients

Scale

Chicken and Seasoning

  • 1 1/2 pounds boneless, skinless chicken thighs
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cooking Ingredients

  • 2 tablespoons olive oil
  • juice of 1 lemon
  • 1/2 cup chicken broth

Toppings and Garnish

  • 1/3 cup crumbled feta cheese
  • 1/4 cup kalamata olives, halved
  • 1/4 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • fresh parsley for garnish

Instructions

  1. Prepare the seasoning mix: In a small bowl, combine dried oregano, dried thyme, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to create a uniform seasoning blend.
  2. Season the chicken: Pat the chicken thighs dry with paper towels to ensure a good sear. Rub both sides of the chicken thoroughly with the prepared seasoning mixture to coat evenly.
  3. Sear the chicken: Heat olive oil in a large skillet over medium-high heat until shimmering. Add the seasoned chicken thighs and cook for 4–5 minutes per side until they develop a golden-brown crust.
  4. Simmer the chicken: Reduce the heat to medium, pour in the lemon juice and chicken broth, then cover the skillet with a lid. Let the chicken simmer for 10–12 minutes, or until fully cooked and no longer pink inside.
  5. Add toppings: Remove the lid and sprinkle the crumbled feta cheese, halved kalamata olives, sliced red onion, and halved cherry tomatoes over the chicken. Cook uncovered for an additional 2–3 minutes, allowing the toppings to warm and flavors to meld.
  6. Garnish and serve: Sprinkle freshly chopped parsley over the dish for a burst of color and freshness. Serve hot alongside your choice of rice, orzo, or roasted vegetables.

Notes

  • Serve with rice, orzo, or a side of roasted vegetables for a complete meal.
  • For extra lemon flavor, add lemon zest to the seasoning mix.
  • You can substitute chicken breasts if preferred—adjust cooking time accordingly to avoid overcooking.
