Description

This Slow Cooker Pulled BBQ Chicken recipe is a flavorful and easy-to-make dish perfect for busy days. Tender chicken breasts are slow-cooked in a rich, smoky barbecue sauce with a blend of spices and sweet brown sugar, resulting in juicy, shreddable meat packed with taste. Ideal for sandwiches, wraps, or salads, this recipe delivers classic BBQ goodness with minimal effort.

Ingredients

Scale

Chicken

  • 3 boneless skinless chicken breasts

BBQ Sauce Mixture

  • 1 18-oz bottle Sweet Baby Ray’s Hickory & Brown Sugar Barbecue Sauce
  • 1/3 cup light brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp chipotle chili powder
  • 1/4 tsp ground white pepper

Optional

  • Slow cooker liner (optional)

Instructions

  1. Prepare the Chicken: Place the fully thawed boneless skinless chicken breasts into the slow cooker. This ensures even cooking and shredding later.
  2. Mix the BBQ Sauce: In a separate bowl, combine the barbecue sauce, light brown sugar, apple cider vinegar, olive oil, garlic powder, onion powder, smoked paprika, chipotle chili powder, and ground white pepper. Stir well until all ingredients are thoroughly mixed.
  3. Coat the Chicken: Pour the prepared BBQ sauce mixture over the chicken breasts in the slow cooker. Make sure each piece is evenly coated with sauce for full flavor infusion.
  4. Slow Cook: Cover the slow cooker with its lid and cook on low heat for 6-7 hours or on high heat for 3-4 hours. The chicken should become tender and easy to shred when done.
  5. Shred the Chicken: Once cooking is complete, use two forks to shred the chicken directly inside the slow cooker. Mix the meat thoroughly with the sauce until fully coated.
  6. Serve: Serve the pulled BBQ chicken on toasted, buttered buns for sandwiches, or add it to wraps, salads, or tacos for a delicious meal. Enjoy!

Notes

  • Ensure the chicken breasts are fully thawed before cooking to ensure even cooking.
  • Using a slow cooker liner can make cleanup easier but is optional.
  • Adjust cooking times depending on your slow cooker’s power and chicken breast size.
  • Leftover pulled chicken can be refrigerated for up to 3 days or frozen for up to 3 months.
  • For extra smoky flavor, add a teaspoon of liquid smoke to the sauce mixture.
