Ingredients
Scale
For the Turkey Filling
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup salsa or diced tomatoes
- 1 can (15 oz) refried beans
Additional Ingredients
- 1 cup cooked rice (optional)
- 1 cup shredded cheddar or Monterey Jack cheese
- ½ cup sour cream
- 6 large flour tortillas
- Chopped cilantro, diced avocado, or hot sauce for serving (optional)
Instructions
- Cook Aromatics and Turkey: In a large skillet over medium heat, warm the olive oil. Add the diced onion and cook for 3–4 minutes until softened. Stir in the minced garlic and cook for 1 more minute until fragrant. Add the ground turkey, breaking it up as it cooks, and continue cooking until browned and fully cooked, about 6–8 minutes.
- Season and Simmer Mixture: Stir in chili powder, cumin, smoked paprika, salt, and black pepper until well incorporated. Mix in the salsa or diced tomatoes and allow the mixture to simmer for 2–3 minutes to blend the flavors. Reduce heat to low, then stir in the refried beans until fully combined and heated through. Remove from heat.
- Warm Tortillas: Slightly warm the flour tortillas to make them easy to fold without cracking.
- Assemble Burritos: Spoon a generous portion of the turkey and bean mixture into the center of each tortilla. Top with shredded cheese, a spoonful of cooked rice if using, and a dollop of sour cream. Fold in the sides and roll up tightly to seal.
- Optional Crisping: For a crispy exterior, place the seam-side down burrito on a skillet or griddle over medium heat. Toast for 1–2 minutes per side until golden brown and slightly crispy.
- Serve: Serve the burritos warm, garnished with optional chopped cilantro, diced avocado, or hot sauce according to preference.
Notes
- Make ahead and freeze burritos individually wrapped for easy meal prep on busy days.
- For a low-carb option, substitute with low-carb tortillas or skip the tortillas and serve as a burrito bowl.
- Use shredded Monterey Jack or cheddar cheese based on your taste preference.
- Adjust seasoning to taste, especially salt and chili powder levels based on spice tolerance.
