Quesadilla Filling

  • 4 flour tortillas (8-inch)
  • 2 cups fresh spinach, chopped
  • ½ cup crumbled feta cheese
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • ¼ teaspoon black pepper

Instructions

  1. Sauté Spinach: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add chopped spinach and cook for 1–2 minutes until wilted. Remove from heat and let cool slightly.
  2. Mix Filling: In a bowl, combine the cooked spinach, crumbled feta cheese, shredded mozzarella, and black pepper. Stir well to create a flavorful filling.
  3. Assemble Quesadillas: Lay out the flour tortillas on a flat surface. Divide the filling evenly over half of each tortilla, then fold the other half over the filling to form a half-moon shape.
  4. Cook Quesadillas: Wipe out the skillet and heat it over medium heat. Lightly coat the pan with cooking spray or a bit of oil. Place one quesadilla in the pan and cook for 2–3 minutes on each side, or until the tortilla is golden brown and the cheese inside has melted. Repeat with remaining quesadillas.
