Instructions
- Prepare the Pan: Lightly grease a 9×13 inch baking pan with butter or non-stick spray to ensure the treats do not stick when setting.
- Melt the Butter and Marshmallows: In a large saucepan over low heat, melt the unsalted butter. Once fully melted, add mini marshmallows and stir continuously until the mixture becomes smooth and fully melted.
- Add Food Coloring and Vanilla: Stir in the vanilla extract followed by the green food coloring until the color is evenly distributed and the mixture is vibrant green.
- Combine with Rice Krispies: Remove the saucepan from heat and quickly add the Rice Krispies cereal, folding gently but thoroughly to coat all cereal pieces evenly with the marshmallow mixture.
- Press Into the Pan: Transfer the mixture into the prepared pan. Using a buttered spatula or wax paper, press the mixture firmly and evenly into the pan to form a compact layer.
- Decorate (Optional): If desired, melt white chocolate chips in a microwave-safe bowl in 20-second intervals until smooth. Drizzle the white chocolate over the treats and sprinkle green sprinkles on top for an added festive touch.
- Let Set and Serve: Allow the treats to cool completely at room temperature to set firmly. Once set, cut into squares or rectangles and serve immediately or store in an airtight container for up to 3 days.
