Description

Celebrate St. Patrick’s Day with these festive and delicious Frosted Bite Brownies featuring a hint of mint and vibrant green frosting, perfect for fun gatherings and parties.

Ingredients

Scale

Brownie Batter

  • 1 box (18.4 oz) brownie mix
  • Ingredients listed on the brownie mix box (usually eggs, oil, and water)
  • 1/2 teaspoon mint extract (optional)

Frosting

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • Green food coloring, to desired shade
  • Festive sprinkles or crushed mint candies for topping

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Lightly grease a mini muffin tin or line it with paper liners to prevent sticking.
  2. Make the Brownie Batter: Follow the instructions on the brownie mix box, adding eggs, oil, and water as directed. Stir in 1/2 teaspoon of mint extract if you want a refreshing mint flavor.
  3. Fill Muffin Cups: Spoon about 1 tablespoon of batter into each mini muffin cup, filling each about 3/4 full for perfect bite-sized brownies.
  4. Bake: Bake for 12 to 15 minutes or until the centers are set and a toothpick inserted comes out with moist crumbs but no raw batter.
  5. Cool the Brownie Bites: Allow the brownie bites to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  6. Prepare the Frosting: Beat the softened butter until smooth and creamy. Gradually add powdered sugar, milk, and vanilla extract, mixing until the frosting is fluffy and spreadable.
  7. Add Color and Frost: Mix in green food coloring until you reach your desired shade of green. Pipe or spread the frosting generously onto each cooled brownie bite.
  8. Decorate: Finish by adding festive sprinkles or crushed mint candies on top for a fun and festive touch.

Notes

  • These brownie bites can be made a day ahead and stored in an airtight container to maintain freshness.
  • For a stronger mint flavor, incorporate mint chocolate chips into the batter or increase the mint extract slightly.
