Ingredients
Scale
Bagel and Cheese
- 2 Everything Bagels, split
- 4 slices Cheddar Cheese (or your favorite cheese)
Steak
- 8 oz Steak, thinly sliced (Ribeye or Sirloin recommended)
- 1 tablespoon Olive Oil
- Salt and freshly ground Black Pepper to taste
Eggs
- 4 Large Eggs
- 1 tablespoon Butter
- Salt and freshly ground Black Pepper to taste
Optional Toppings
- Hot sauce, for serving
- Caramelized Onions
- Sriracha Mayo
Instructions
- Prepare the Steak Slices: Partially freeze the steak for about 30 minutes to make slicing easier. Slice the steak thinly to about 1/8 inch thickness to ensure quick and even cooking.
- Season the Steak: Toss the sliced steak in a bowl with a generous pinch of salt and freshly ground black pepper. Optionally, add garlic powder or onion powder for extra flavor.
- Heat the Skillet: Heat olive oil in a large skillet over medium-high heat until hot to get a good sear on the steak.
- Cook the Steak: Add the steak slices in a single layer without overcrowding the pan. Cook for 1-2 minutes on each side until browned and cooked to your preferred doneness. Cook in batches if necessary to avoid steaming.
- Rest the Steak: Remove the cooked steak and place it on a plate. Tent loosely with foil to keep warm and let the juices redistribute.
- Melt Butter for Eggs: In the same or a separate non-stick skillet, melt butter over medium heat to add richness to the eggs.
- Cook the Eggs: Crack eggs into the skillet and cook to your preferred style: sunny-side up, over easy, over medium, or over hard. For sunny-side up, cook until whites are set; for over easy or more cooked versions, flip as needed and cook accordingly.
- Season the Eggs: Add salt and pepper to taste while cooking.
- Add Cheese: During the last minute of cooking, place a slice of cheddar on each egg. Cover the skillet briefly to melt the cheese thoroughly.
- Toast the Bagels: Meanwhile, toast the bagel halves to your desired crispness to enhance texture and prevent sogginess.
- Assemble Sandwich – Bagel Bottoms: Place the bottom halves of the toasted bagels on plates.
- Add Steak: Divide the rested, cooked steak evenly over the bagel bottoms.
- Add Cheesy Eggs: Carefully place each cheesy egg atop the steak layers on the bagels.
- Add Optional Toppings: If desired, add caramelized onions, hot sauce, or sriracha mayo to the eggs for extra flavor.
- Close Sandwiches: Place the top halves of the bagels over the egg and steak layers to complete the sandwiches.
- Serve Immediately: Serve the sandwiches warm right away to enjoy the melted cheese and juicy steak at their best.
Notes
- Partially freezing the steak makes slicing thinly much easier and safer.
- Do not overcrowd the skillet when cooking steak to ensure a proper sear instead of steaming.
- Resting the steak after cooking keeps it juicy and tender.
- Use your preferred egg style for optimal enjoyment.
- Cover the eggs briefly when adding cheese to speed melting.
- Toasting the bagels prevents sogginess and adds a nice crunch.
- Customizing with optional toppings can elevate the flavor profile.
