- 2 tbsp melted butter
- 1 tbsp honey
- 1 tsp hot sauce (or more to taste)

- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- 1/4 tsp black pepper

Instructions
- Preheat Oven: Preheat the oven to 425°F and line a baking sheet with parchment paper to prepare for roasting.
- Boil Potatoes: Place baby potatoes in a large pot, cover with water, and bring to a boil. Cook for 15–20 minutes, or until fork-tender. Drain and let cool slightly.
- Smash Potatoes: Transfer potatoes to the prepared baking sheet. Use the bottom of a glass or a fork to gently smash each potato to about 1/2 inch thick.
- Prepare Coating: In a small bowl, mix together olive oil, melted butter, honey, hot sauce, smoked paprika, garlic powder, cayenne, salt, and black pepper to create a flavorful coating.
- Brush Potatoes: Brush the mixture generously over the smashed potatoes to ensure they are fully coated with the sweet and spicy blend.
- Roast Potatoes: Roast in the oven for 25–30 minutes, flipping once halfway through, until the potatoes are crispy and golden on the edges.
- Garnish and Serve: Remove from the oven and sprinkle with chopped parsley or green onions if desired. Serve the smashed potatoes hot.
