Paired with a tangy Greek yogurt sauce infused with fresh dill and lemon, these air-fried burgers are both wholesome and delicious, perfect for a quick and nutritious meal.

Ingredients

Scale

Burger Patties

  • 1 (10-ounce) package Birds Eye® Steamfresh® Sweet Peas
  • 2 medium russet potatoes, peeled and cubed
  • 1/2 sweet onion, chopped
  • 1 cup crumbled feta cheese
  • 1 tablespoon fresh dill, minced
  • 1 tablespoon fresh parsley, minced
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil (for spraying)

Greek Yogurt Sauce

  • 1 cup Greek yogurt
  • 1 tablespoon fresh dill, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1/3 cup crumbled feta cheese
  • Salt and black pepper to taste

Burger Assembly (Optional)

  • Toasted burger buns
  • Fresh tomato slices
  • Onion slices
  • Arugula leaves

Instructions

  1. Prepare the Sweet Peas: Blanch the sweet peas in boiling water for 2-3 minutes to soften them. Drain thoroughly and then mash them in a bowl using a fork to create a coarse puree.
  2. Cook the Potatoes: Boil the peeled and cubed russet potatoes in salted water until they become soft, about 10-15 minutes. Drain and allow them to cool for about 10 minutes.
  3. Mix the Burger Ingredients: In the bowl with the mashed sweet peas, add the cooled potatoes, chopped sweet onion, crumbled feta cheese, minced fresh dill and parsley, egg, salt, black pepper, and paprika. Mix everything well until all ingredients are thoroughly combined to form a cohesive mixture.
  4. Form the Patties: Shape the pea and potato mixture into patties approximately 4 inches in diameter. Place the patties on a plate or tray and refrigerate them for 30 minutes to help firm up and hold their shape during cooking.
  5. Make the Sauce: In a separate bowl, combine Greek yogurt, minced fresh dill, lemon zest, lemon juice, and crumbled feta cheese. Season the sauce with salt and black pepper to taste. Mix well and refrigerate until ready to serve.
  6. Cook the Patties: Lightly spray both sides of the patties with olive oil. Place them in an air fryer set to 375°F (190°C) and cook for about 15 minutes, flipping halfway through, until the patties are golden brown and cooked through.
  7. Assemble the Burgers: Serve the cooked patties on toasted buns. Top with the prepared creamy Greek yogurt sauce, fresh tomato slices, onion slices, and arugula leaves for a complete and flavorful burger experience.

Notes

  • Blanching the peas softens them and enhances the texture of the patties.
  • Allowing the patties to rest in the refrigerator helps them hold their shape better during cooking.
  • You can substitute Greek yogurt sauce with tzatziki or a simple tzatziki-style sauce if preferred.
  • Adjust seasoning and herbs in the patties and sauce to your preference for added flavor.
  • These burgers work well as a vegetarian option but are not vegan due to egg and feta cheese.
