Meat Mixture

- 1 packet (1 oz) taco seasoning
- 1/2 cup water
- 1 (15 oz) can black beans, drained and rinsed
- 1 (10 oz) can diced tomatoes with green chiles (like Rotel)
Hash Brown Mixture
- 1 (15 oz) bag frozen shredded hash browns, thawed
- 1 1/2 cups shredded cheddar cheese, divided
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- Salt and pepper to taste

- Jalapeños

Instructions
- Preheat and Prepare. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Cook Meat. In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess grease if necessary.
- Season Meat. Add the taco seasoning and water to the browned meat, stirring to combine. Simmer for 2 to 3 minutes until the mixture thickens slightly.
- Add Beans and Tomatoes. Stir in the drained black beans and diced tomatoes with their juices, and cook for another 2 minutes to meld the flavors.
- Mix Hash Browns. In a large bowl, combine the thawed hash browns, 1 cup of shredded cheddar cheese, sour cream, garlic powder, salt, and pepper. Mix thoroughly until evenly incorporated.
- Assemble Casserole. Spread the hash brown mixture evenly in the prepared baking dish. Layer the taco meat mixture over the top, and then sprinkle the remaining 1/2 cup of cheddar cheese evenly over the casserole.
- Bake. Place the casserole in the preheated oven and bake for 30 to 35 minutes, or until the casserole is hot, bubbly, and golden on top.
- Rest and Serve. Remove from the oven and let rest for 5 minutes before serving. Add optional toppings such as sliced green onions, diced tomatoes, jalapeños, or avocado as desired.
