  • 1/2 cup water
  • 1 (15 oz) can black beans, drained and rinsed

Hash Brown Mixture

  • 1 (15 oz) bag frozen shredded hash browns, thawed
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

  • Diced tomatoes
  • Jalapeños

Instructions

  1. Preheat and Prepare. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Cook Meat. In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess grease if necessary.
  3. Season Meat. Add the taco seasoning and water to the browned meat, stirring to combine. Simmer for 2 to 3 minutes until the mixture thickens slightly.
  4. Add Beans and Tomatoes. Stir in the drained black beans and diced tomatoes with their juices, and cook for another 2 minutes to meld the flavors.
  5. Mix Hash Browns. In a large bowl, combine the thawed hash browns, 1 cup of shredded cheddar cheese, sour cream, garlic powder, salt, and pepper. Mix thoroughly until evenly incorporated.
  6. Assemble Casserole. Spread the hash brown mixture evenly in the prepared baking dish. Layer the taco meat mixture over the top, and then sprinkle the remaining 1/2 cup of cheddar cheese evenly over the casserole.
