Ingredients
Scale
Main Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 8 oz elbow macaroni
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 1 tablespoon olive oil
- Salt and pepper to taste
Optional Toppings
- 1/2 cup diced tomatoes
- 1/4 cup sliced green onions
- 1/4 cup chopped cilantro
Instructions
- Cook the Macaroni: Prepare the elbow macaroni as per the package instructions, usually boiling it until tender, then drain and set aside for later use.
- Brown the Ground Beef: Heat olive oil in a large skillet over medium heat. Add the ground beef and cook for 5-7 minutes, breaking it apart with a spatula until evenly browned.
- Season the Beef: Drain leftover grease from the cooked beef. Stir in the taco seasoning and 1 cup of water, then simmer for 5 minutes to thicken and enhance the flavors.
- Combine Beef and Macaroni: Add the cooked elbow macaroni to the skillet with the seasoned beef mixture. Stir well to combine all ingredients evenly.
- Melt the Cheese: Lower the heat to low and add both shredded cheddar and mozzarella cheese. Stir continuously until the cheese is fully melted and the mixture turns creamy.
- Add Creaminess: Stir in the sour cream and milk to create a smooth, creamy texture. Taste and adjust seasoning with salt and pepper accordingly.
- Garnish and Serve: Top the dish with optional diced tomatoes, green onions, and chopped cilantro. Serve the taco mac and cheese hot and enjoy your flavorful meal!
Notes
- For a spicier dish, add a pinch of cayenne pepper or chopped jalapeños when cooking the beef.
- You can substitute ground turkey or chicken for a leaner option.
- To make it vegetarian, omit the beef and increase the cheese or add beans as a protein substitute.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated on the stovetop or microwave.
- For extra creaminess, add a little more milk or sour cream.
