Description

This Taco Mac and Cheese recipe combines the hearty flavors of seasoned ground beef with creamy, cheesy macaroni, creating a delicious fusion of taco and mac and cheese classics. Ready in just 30 minutes, it’s a comforting and flavorful dish perfect for a quick weeknight dinner.

Ingredients

Scale

Main Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 8 oz elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Optional Toppings

  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup chopped cilantro

Instructions

  1. Cook the Macaroni: Prepare the elbow macaroni as per the package instructions, usually boiling it until tender, then drain and set aside for later use.
  2. Brown the Ground Beef: Heat olive oil in a large skillet over medium heat. Add the ground beef and cook for 5-7 minutes, breaking it apart with a spatula until evenly browned.
  3. Season the Beef: Drain leftover grease from the cooked beef. Stir in the taco seasoning and 1 cup of water, then simmer for 5 minutes to thicken and enhance the flavors.
  4. Combine Beef and Macaroni: Add the cooked elbow macaroni to the skillet with the seasoned beef mixture. Stir well to combine all ingredients evenly.
  5. Melt the Cheese: Lower the heat to low and add both shredded cheddar and mozzarella cheese. Stir continuously until the cheese is fully melted and the mixture turns creamy.
  6. Add Creaminess: Stir in the sour cream and milk to create a smooth, creamy texture. Taste and adjust seasoning with salt and pepper accordingly.
  7. Garnish and Serve: Top the dish with optional diced tomatoes, green onions, and chopped cilantro. Serve the taco mac and cheese hot and enjoy your flavorful meal!

Notes

  • For a spicier dish, add a pinch of cayenne pepper or chopped jalapeños when cooking the beef.
  • You can substitute ground turkey or chicken for a leaner option.
  • To make it vegetarian, omit the beef and increase the cheese or add beans as a protein substitute.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated on the stovetop or microwave.
  • For extra creaminess, add a little more milk or sour cream.
