Sausage and Vegetables

  • 1 Tbsp olive oil
  • 1 lb andouille sausage or smoked sausage, cut into ¼-inch slices
  • 1 cup chopped onion
  • 1 tsp minced garlic

Beans and Broth

  • 1 lb dried great northern beans
  • 8 cups unsalted chicken broth
  • 1 Tbsp Cajun seasoning (or to taste)
  • 1 bay leaf
  • Salt and black pepper, to taste


Instructions

  1. Prepare the beans and sausage: Rinse and sort the dry great northern beans to remove any debris or damaged beans. Heat the olive oil in a Dutch oven or large pot over medium-high heat. Add the sliced andouille sausage and cook for about 5 minutes until browned and slightly crisp.
  2. Sauté aromatics: Add the chopped onion to the pot with the sausage and cook, stirring occasionally, until the onion becomes soft and translucent. Then add the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Combine ingredients and simmer: Stir in the rinsed dry beans, chicken broth, Cajun seasoning, and bay leaf. Bring the mixture to a boil, then reduce the heat to medium-low. Let it simmer uncovered for 1½ to 2 hours, stirring occasionally, until the beans are tender and fully cooked.
  4. Season and garnish: Taste the beans and sausage mixture and add salt, black pepper, and additional Cajun seasoning as desired. Remove and discard the bay leaf. Garnish with fresh parsley and green onions before serving, if desired.

  • Soaking the dry beans overnight can reduce cooking time and improve digestibility, though it’s not required for this recipe.
