Description

This Whole Peach Mochi recipe offers a delightful Japanese-inspired dessert featuring soft, chewy glutinous rice dough wrapped around a whole ripe peach. The combination of juicy fruit and sweet mochi dough creates a perfect balance of flavors and textures, ideal for a unique and refreshing treat.

Ingredients

Scale

Fruit

  • 3 whole small ripe peaches (peeled and pitted)

Mochi Dough

  • 1 cup glutinous rice flour (mochiko)
  • 3/4 cup water
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • Optional food coloring (light pink or orange)

For Dusting

  • 1/4 cup cornstarch

Instructions

  1. Prepare the Peaches: Gently peel and pit the peaches, keeping them as whole and intact as possible. Set them aside for later use.
  2. Make the Mochi Dough: In a microwave-safe bowl, combine the glutinous rice flour, granulated sugar, and water. Mix thoroughly until the mixture is smooth and free of lumps. Then stir in the vanilla extract and add optional food coloring if desired.
  3. Cook the Mochi Dough: Cover the bowl loosely with plastic wrap or a microwave-safe plate. Microwave on high for 2 minutes, then remove and stir the dough. Microwave again for another 1 to 2 minutes until the dough thickens and turns slightly translucent, indicating it is cooked through.
  4. Prepare to Wrap: Dust a clean surface generously with cornstarch. Transfer the hot mochi dough onto this surface, allowing it to cool slightly until it is safe to handle without burning your hands.
  5. Shape the Mochi: Divide the mochi dough into three equal portions. Flatten each piece into a circle large enough to completely wrap a peach. Place one peeled peach at the center of each dough circle, then gently stretch the mochi around the peach, pinching the edges at the bottom to seal it completely.
  6. Finish and Chill: Lightly dust the finished mochi with cornstarch to prevent sticking. Chill the wrapped mochi in the refrigerator for 10 to 15 minutes before serving to firm up the texture slightly and enhance the eating experience.

Notes

  • Use small, ripe but firm peaches for easier wrapping around the mochi dough.
  • If the mochi dough is too hot to handle, refrigerate it for several minutes to cool down safely.
  • For extra flavor, you can brush the peaches lightly with honey before wrapping them in mochi.
