Description

This Zesty Shrimp Avocado Salad is a fresh and flavorful delight, combining tender boiled shrimp with creamy avocados, juicy cherry tomatoes, and a tangy lime dressing. Perfect as a light meal or appetizer, it offers a healthy balance of protein, healthy fats, and vibrant veggies, finished with a kick of jalapeño spice.

Ingredients

Scale

Shrimp and Salad Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • Mixed greens or baby spinach for serving

Dressing

  • Juice of 2 limes
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste

Instructions

  1. Cook Shrimp: Bring a pot of salted water to a boil. Add the peeled and deveined shrimp and cook until they turn pink and opaque, about 2-3 minutes. Immediately drain and transfer shrimp to an ice bath to stop cooking and cool them down.
  2. Prepare Dressing: In a large bowl, whisk together the lime juice, extra virgin olive oil, honey, ground cumin, salt, and black pepper until well combined to create the zesty dressing.
  3. Combine Salad Ingredients: Add the cooled shrimp, diced avocados, halved cherry tomatoes, finely chopped red onion, chopped cilantro, and minced jalapeño to the bowl with the dressing.
  4. Toss Salad: Gently toss all ingredients together until evenly coated with the dressing, being careful not to mash the avocados. Taste and adjust seasoning if necessary.
  5. Serve: Plate the salad atop a bed of mixed greens or baby spinach for a fresh and light meal or appetizer. Serve immediately for best freshness.

Notes

  • For a spicier kick, leave some jalapeño seeds in or add a dash of cayenne pepper.
  • Substitute shrimp with grilled chicken or tofu for different protein options.
  • To keep avocado from browning, ensure it’s thoroughly coated with the lime dressing.
  • This salad is best served immediately but can be stored in the fridge for a few hours without losing texture.
