Garlic Tzatziki

- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill
- Salt and pepper to taste
Instructions
- Prepare the zucchini: Grate the zucchinis and place the grated zucchini into a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible to avoid soggy fritters.
- Mix the fritter batter: In a large bowl, combine the drained zucchini, finely chopped spinach, crumbled feta, eggs, flour, sliced green onions, minced garlic, dried oregano, salt, and black pepper. Stir well until all ingredients are evenly incorporated.
- Cook the fritters: Heat a thin layer of olive oil in a nonstick skillet over medium heat. Using a tablespoon or small ice cream scoop, drop about 2 tablespoons of the mixture per fritter into the skillet. Flatten each slightly with the back of a spoon. Cook for 3 to 4 minutes on each side, or until golden brown and cooked through. Transfer cooked fritters to a paper towel-lined plate to remove excess oil.
